Chocolate orangettes
Roy René's chocolate orangettes are made from thin strips of candied orange peel, coated in 70% dark chocolate. This speciality showcases the expertise of the confectioners, who select the oranges for their flavour and texture.
The preparation is based on an ancient tradition, already mentioned in 1555 by Michel de Nostredame, apothecary in Salon de Provence, in his book on confectionery. The peels are candied using a method that involves gradually replacing the water in the fruit with sugar. After candying, they are drained and then covered with a thin layer of sugar to preserve their flavour and softness, while preventing them from sticking.
The dark chocolate coating enhances the tangy sweetness of the orange for a fruity, intense treat.
